Jiaozi

Minced meat with Chinese chives in a wheat dough. Panfried and served with ginger and spring onions with vinegar. A typical Northern Chinese dish.

Ingredients:
Jiaozi wrap (available at the freezer section)
minced pork
chopped Chinese Chives(or spring onion)
egg
pepper
light soya sauce
sugar
flour
Sauce:

finely sliced ginger
finely sliced spring onion
Chinese red/brown vinegar.


Method:

Mix ingredients and seasonings, wrap and wet the edges with water and seal leaving no air inside the package, whole both ends and push toward the center to create nice folds.

Heat some oil in non stick pan, put in the Jiaozi when the pan begins to smoke. Let it brown and turn over. When both sides are nicely browned, pour in a little water, cover and let it cook with the steam generated for just a couple of minutes.

Served hot with spring onion, ginger and vinegar/soya sauce splash over it.
