Gong Bao Ji Ding

Sweet and spicy chicken with a great lemon flavour!

Ingredients:
chicken breast diced
roasted cashew nuts
whole dried chillies
(crush some if you like the dish hot)
Seasoning:

plum sauce
lemon sauce
Szechuan pepper
Black pepper (powder)

Method:

Fry dried chillie in a little oil till partly burnt, throw in chicken and stir fry till done, add a little water if necessary. Add seasoning and mix in cashew nuts. Served with the chillies though they're not meant to be eaten.

Note on spices:

Though a lot of chillies are used, it's more to stimulate appetite by sight as it's not at all hot unless water is added during the cooking process.

Lemon sauce is not traditionally used but I love the tangy flavour imparted. If you're not used to the numbing effect of szechuan pepper, used just black pepper.
