  • I really enjoy "The Modern Art of Chinese Cooking" by Barbara Tropp; it has a very detailed discussion of cooking techniques, as well as a list of ingredients with brand names. The recipes are great, but, as I'm not Chinese and haven't visited China, I cannot say if they are "authentic" or not. - Andrew

  • The Book of Currieis and Indian Foods. By Linda Fraser. Published by HP Books. A nice book with great photos and wonderful recipes like: Creamy Saffron Fish Curry, Banana Yogurt Milkshake, Chicken in Ginger Sauce and Duck and Coconut Curry. It's a a very verticle book! By that I mean it's alot longer than it's wide. An unusual format. - Susan
  • The book "Indian Cooking" by Madhur Jaffrey is excellent. It shows how to make your own garam masala. The book is published by Barron's by arrangement with the BBC. - Roger

    Madhur Jaffrey (a number of good books)
    Yamuna Devi (very detailed, vegetarian --I also like her lower fat _Yamunas Table_ though not strictly Indian)
    Julie Sahni (interesting info/history, 1 vegetarian volume and another which includes meats. I probably use her books the most) - Mary G. Croft
  • I highly recommend Yamuna Devi's book "Lord Krishna's Cuisine, The Art Of Indian Vegetarian Cooking". My husband is from Madras, India & I have alot of Indian cookbooks. This is the most authentic book I've seen yet. I regret that there aren't any pictures of the delicious food, though. - Sharon Raghavachary
  • Also check out The Great Curries of India by Camilla Panjabi...recommended to me by the owner of our local Indian restaurant and grocery store...the stuff comes out much better than in Linda Fraser's book and there's a bit of history and philosophy thrown in...- Marylyn
  • Not strictly Indian, but a great book for curries from around the world is _A World of Curries_ by DeWitt and Pais. The book includes lots of great history of the curries, as well as detailed technique. - Jeff Benjamin
  • IMHO, one of the best (and most prolific) authors on Indian cooking is Madhur Jaffrey; she has several books out, all of which I have used and not a ringer in the bunch. She gives you the Indian names as well as the English names for ingredients (my Indian sources frequently don't translate their goods) and any acceptable substitutions.
    Some of the ingredients may raise an eyebrow, but like Vietnamese cooking, when they're used all together they are sublime. - Sue
  • "Classic Indian Cooking" by Julie Sahni. It even looks like one of Marcella Hazan's volumes! I have it on my shelf, side by side with "Classic Italian Cooking. Topnotch recipes, clearly written and explained. - David Casseres
