Fried Rice is such a simple dish i'm surprise so many asked for a recipe!! Fried rice is what my mom makes when there's a lot of left over rice from the previous night. Garlic, egg, and fish sauce are the basic ingredients, the rest is up to your imgination. Use a combination of ingredients for color! Set fire on high, heat oil in wok and fry garlic till fragrant, add rice and fry till rice becomes loose. Push rice aside, add oil in the emptied centre of wok and add eggs, scramble and cook briefly before mixing in the rice. Add in the other ingredients, when the ingredients are cooked, splash in fish sauce and add pepper to taste, sprinkle spring onions on top and serve hot. Note: I like to add ketchup and garlic chili sauce in my fried rice ... remember it's like making sandwiches, everyone has his own version.
