Encrasicholina and Stolephorus species
A small dried fish used in various dishes both as an ingredient and as a flavouring. To use, remove heads and guts which tend to be bitter. Sometimes made into a powder. Pre-peeled is preferable whenever available.
Indian Bay Leaf

Cinnamomum tamala
Has a strong somewhat minty taste. It comes from the indian cinnamon tree Cinnamomum Tamala (Thai bay leaf comes from yet another species). It is not the same as European bay leaf which comes from Laurus nobilis though it is used in a similar manner.
Indian Borage

Plectranthus amboinicus
Of Indian origin but grow wild in the Malaysian region. The thick leaf has a strong aroma and is used by the Indians to flavour meat and as a herbal medicine.
