Nigella Seeds
............................................................
Nigella sativa
Looks pretty much like onion seeds. Nigella is used in the Indian kitchen in pickles and vegetable curries. It is slightly bitter and somewhat aromatic.
Noodles
............................................................
Noodles may be made from rice, wheat, beans or occasionally other flour and starch. There are countless varieties. While taste is subjective and often interchangeable, it is important to use the right type of noodles suited to the cooking and serving method so that you won't end up with a mess. Noodles made with natural ingredients are usually dull in colour.

Morinda citrifolia
The plant, including the fruit, is widely used as a medicine to treat various illnesses.
Nutmeg
............................................................
A spice from the Indonesian spice Islands, it's use in cooking is strangely not very widespread. It's used in spice mix and sometimes grated over certain dishes. Preserved fresh fruits are eaten as a candy. The Dutch remains one of the heavy users of this spice, grating over such dishes as brussels sprouts and asparagus.

Mace is the net like covering of the seed which is also used as a spice, again not widely used in Southeast Asia.
