Do not add dried mushroom!! Less is more, according to Paul! Few ingredients but the result is pretty great! Ingredients: Tee Kha (pig's leg, the upper section) garlic white pepper dark soya sauce light soya sauce rice wine fresh red chilli little ginger salt msg method: Boil a pot of water and cook Tee Kha for several minute, remove and put in another pot of boiling water (just enough to cover) with the rest of the ingredients.
